<p>Prendete 500 gr di trippa, lavatela e immergetela in abbondante acqua leggermente salata con mezza cipolla, mezzo sedano e mezza carota, che avrete portato ad ebollizione. Fatela cuocere per circa 5-10 minuti poi toglietela dall’acqua e fatela raffreddare in una ciotola. Quando si sarà raffreddata tagliate la trippa a strisce sottili e mettetela da parte.<br />
Preparate un battuto con i rimanenti mezza cipolla, mezzo sedano e mezza carota, aggiungendo l’aglio, la salvia e il rosmarino. In una casseruola mettete il battuto, l’olio e.v.o., un pò d’acqua e fate stufare per una decina di minuti. A questo punto aggiungete la trippa e amalgamate il tutto. Dopo qualche minuto aggiungete il triplo concentrato di pomodoro e cuocete a fuoco basso. Per mantenere la trippa umida e non farla attaccare al fondo della casseruola, bagnate sempre con un pò di brodo vegetale. Lasciate cuocere per circa 40 minuti. La tradizione vuole che dopo la cottura, la trippa debba riposare almeno un giorno prima di essere consumata così da aumentare il suo sapore. Quindi riscaldate la trippa in una casseruola e servitela ben calda con una grattugiata di Tre Latti Lari.</p>

<p>Prendete la zucca e tagliala a spicchi togliendo i semi e passarla in forno a 180°C coperta da fogli di alluminio finché non sarà cotta.<br />
Dopodiché aspettate che raffreddi e, con l‘aiuto di un cucchiaio, separate la polpa dalla buccia che butterete via.<br />
Prendete il porro e tagliatelo a pezzi di circa 1 cm e stufatelo in una pentola con olio e.v.o. aggiungendo un mestolo d’acqua. Quando sono stufati aggiungete la polpa della zucca, salate e pepate a piacere e ultimate la cottura. A cottura ultimata frullate il tutto in modo da ottenere una vellutata, aggiungete una parte di Capriccio Toscano, mentre la parte rimanente mettetela a decorazione sul piatto da portata.<br />
Servite con l’aggiunta di una generosa grattata di pepe.</p>

<p>Riempite una pentola di acqua e mettetela sul fuoco.<br />
In attesa che l’acqua bolla, prendete il pestello e iniziate a pestare il basilico, pestandolo con un movimento circolare sulle pareti.<br />
Quando inizia a rilasciare un liquido verde, aggiungi il Pecorino Roncione a Latte Crudo e un pizzico di sale. Sempre facendo ruotare il pestello, versate a filo l’olio e.v.o. che avete precedentemente fatto raffreddare in frigorifero per circa 30 minuti. Cercate di terminare nel minor tempo possibile. Se non avete il pestello potete ripetere il tutto nel robot da cucina.<br />
Prendete il testarolo e tagliatelo in quadrati di circa 3-4 cm di lato. Quando l’acqua inizia a bollire salatela e dopo un minuto versate i pezzetti di testarolo e lasciarli rinvenire per alcuni minuti.<br />
Colate i pezzi di testarolo e conditeli con il pesto fatto in precedenza.<br />
Serciteli con una grattata di Pecorino Roncione a Latte Crudo.</p>

<p>Tritate la cipolla e stufatela con due cucchiai di olio e.v.o. nella padella. In una casseruola tostate il riso con un pizzico di sale e sfumate con del brodo vegetale. A questo punto aggiungete la cipolla stufata e portate a cottura il riso aggiungendo poco per volta il brodo.<br />
A cottura ultimata tirate fuori dal fuoco la casseruola, aggiungete il pecorino al tartufo, il burro e mantecate il tutto. Lasciate riposare il riso per almeno due minuti con un canovaccio sopra la casseruola.<br />
Servite nei piatti da portata e aggiungete un’abbondante grattatata di tartufo.</p>

<p>Versate su una spianatoia la farina, impastatela accuratamente con le uova. Una volta che l’impasto risulterà liscio avvolgetelo nella pellicola e lasciatelo riposare per un’ora. Nel frattempo, in una ciotola, preparate il ripieno amalgamando la Ricotta La Pec con le uova e il pecorino grattugiato, salate poco; dopodichè inserite il composto in un sac a poche e riporlo in frigo.<br />
Passata l’ora di riposo, stendete la sfoglia molto sottile con il matterello o con l’apposita macchina e ricavatene tanti rettangoli di circa 8 e 10 centimentri di lato. Togliete il ripieno dal frigorifero e disponetelo al centro dei rettangoli di pasta, aiutandovi nel dosaggio con il sac a poche. Infine chiudete i ravioli a formare rettangoli della metà di quelli precedenti.<br />
Per chiudere meglio la pasta bagnatevi leggermente i polpastrelli delle dita e passateli sopra il bordo esterno dei rettangoli prima di chiuderli.<br />
A questo punto cuocere i ravioli in abbondante acqua bollente salata e lasciate cuocere per tre minuti circa.<br />
In una padella fate sciogliere il burro con la salvia e unite i ravioli appena scolati facendoli saltare per far incorporare il burro fuso. Servite in un piatto aggiungendo sopra i ravioli la granella di pistacchio e una copiosa grattugiata de Il Pecorino Toscano DOP Stagionato.</p>

<p>Portate ad ebollizione l’acqua in una pentola capiente e salatela. Appena il sale si sarà sciolto versate i paccheri e lasciateli cuore a fuoco medio per circa 15 minuti, ma che rimangano al dente.<br />
Mentre cuociono i paccheri prendete il Morbidoso Toscano e tagliatelo a cubetti di circa 1 centimentro di lato.<br />
In una padella scaldate il ragù e appena i paccheri saranno cotti scolateli e uniteli al ragù in padella.<br />
Saltate i paccheri, unite il morbidoso e mantecate finché il formaggio non sarà ben sciolto.<br />
Servite caldo.</p>

<p>Per prima cosa prendere la pentola e versateci l’acqua, il sale e due cucchiai di olio e.v.o.. Accendete il fuoco e quando sarà arrivato ad ebollizione versateci la farina di mais bramata, mescolandola con un mestolo di legno.<br />
Cuocete la farina per circa 50 minuti, toglietela dal fuoco e versatela nello stampo lasciandola raffreddare per qualche ora.<br />
Nel frattempo prendete i porcini, puliteli delicatamente e tagliateli a fette di 5 mm circa di spessore. Prendete una padella antiaderente versateci un cucchiaio di olio e.v.o., l’aglio schiacciato in camicia (senza togliere la pelle) e il rametto di timo. Appena l’aglio comincia a sfrigolare mettete i funghi e lasciate cuocere per alcuni minuti aggiustando di sale e pepe.<br />
Quando la polenta si è raffreddata ricavate dei dischetti tagliandola finemente.<br />
A questo punto tagliate il Frescopecora fette di circa 5 mm di spessore. Create ora delle torrette alternando i dischetti di polenta a strati di Frescopecora e i funghi che avete cotto poco prima.<br />
Per finire prendete la teglia su cui precedentemente avete steso la carta da forno, disponete le torrette e infornate a 200°C finché il formaggio non sarà fuso.<br />
Servite con una spolverata di pepe nero.</p>

<p>Iniziate dal ragù che è la preparazione più lunga.<br />
Tritate finemente la carota, il sedano e la cipolla.<br />
Mettete il trito in pentola con un filo d’olio e lasciate soffriggere. Unite la carne macinata e fatela rosolare per qualche minuto. Alzate il fuoco, sfumate con il vino bianco e lasciate che evapori completamente l’alcool. Versate la passata di pomodoro, aggiungete lo zucchero e salate a piacimento. Riempite di acqua la bottiglia di passata vuota e versatela nella pentola. Fate cuocere il ragù alla bolognese per circa due o tre ore a fuoco basso.<br />
Adesso passiamo alla besciamella. In un pentolino mettete a sciogliere a fuoco lento il burro. Togliete il pentolino dal fuoco e incorporate la farina girando con una frusta.<br />
Ponete di nuovo il pentolino sul fuoco e aggiungete un po’ alla volta il latte che avrete portato ad ebollizione. Salate, aggiungete un pizzico di noce moscata e lasciate cuocere a fuoco lento finché non si addensa per circa 15 minuti. A questo punto prendete la Caciotta Nonna Emma e tagliatela a cubetti, imburrate la pirofila per non fare attaccare le lasagne e iniziate a formare gli strati alternando la sfoglia e il ragù, besciamella e Nonna Emma.<br />
Quando avrete finito gli strati cospargete lo strato finale con Il Pecorino Toscano DOP Stagionato grattugiato e infornate per 20 minuti a 180° e<br />
finché la parte superiore non sarà gratinata.<br />
Lasciate riposare per 5 minuti e servite.</p>

<p>Per prima cosa prendete la pentola, riempitela di acqua e mettetela sul fuoco per portarla ad ebollizione.<br />
Prendete i formaggi, grattateli e mischiateli dentro una ciotola.<br />
Quando l’acqua bolle salatela e dopo qualche minuto versate i pici. A cottura ultimata scolate i pici e versateli dentro la ciotola aggiungendo abbondante pepe nero macinato e le foglioline di maggiorana, infine mantecate il tutto. Se vedete che i pici sono leggermente secchi potete aggiungere un po’ di acqua a temperatura ambiente e continuare a mantecare. Serviteli caldi e quando li avrete impiattati aggiungete a piacere ancora pepe.</p>

<p>Prendete una ciotola abbastanza capiente, versateci dentro la ricotta, le uova, la farina 00 setacciata, il sale e Il Pecorino Toscano DOP Stagionato precedentemente grattugiato.<br />
Amalgamate il tutto fino ad ottenere un impasto elastico. Prendete il sac à poche e avvitateci un beccuccio dal diametro di 2 cm. Versate abbondante semola sul tavolo e inserite l’impasto ottenuto precedentemente nel sac a poche. A questo punto stringete il sac e formate delle strisce con l’impasto sopra la semola, dopodiché tagliatele ogni 2-3 cm così da formare gli gnocchi della grandezza desiderata.<br />
Portate ad ebollizione l’acqua in una pentola, salatela e immergete gli gnocchi fin quando non cominceranno a salire a galla. A questo punto<br />
toglieteli dall’acqua e adagiateli sopra la salsa di pomodoro che avrete precedentemente preparato.<br />
Servite il piatto con una generosa grattata de Il<br />
Pecorino Toscano DOP Stagionato.</p>
