La Mini Pecora Vera
Traditional semi-matured pecorino cheese with a small size of 1 kg and a typical brown rind obtained through treatment with olive oil grounds. The paste is semi-hard, smooth and doughy; it has a limited eye formation and a straw yellow colour. The flavour is balanced with a medium sapidity.
