After visiting the production plant, we will take you on a tour of our two maturing caves, located at Loc. Roncione and the charming medieval village of Lari.

Cave maturing is an ancient technique that involves maturing cheeses inside tuff caves, where the environmental conditions, temperature and humidity are totally natural.
These conditions allow the cheese to develop unmistakable flavours and aromas. A journey that will make you appreciate even more the value of tradition and quality.<\/p>\n\n\n\n

At the end of the visit a tasting <\/strong>awaits you, enjoy this relaxing moment at your own pace.
Finally, we will move on to visit the Grotta del Roncione<\/strong>, where the raw-milk Pecorino Roncione is ripened, and the Grotta di Lari<\/strong>, in the medieval village of the same name.<\/p>\n\n<\/div><\/div><\/div>\n\n
